How the search for market items worth buying works:

Space Markets first checks all items in the station you chose, to calculate their historical average price and their current price. It then presents the best picks for you, sorted by the difference between their historical average price and their current price.

The idea being that items currently below their normal value have a tendency to revert to that value over time (Mean Reversion).

How the search for market items worth transporting works:

Space Market fetches current open orders in all public stations. It then finds the most profitable stations combinations, that is, the cheapest sell orders and the highest buy orders. Finally, it presents the results sorted by the highest potential profit.
